Beef Tapa:

  • 1 pound beef sirloin (New York strip, or boneless rib eye), sliced thin against the grain*

  • 1/4 cup reduced-sodium soy sauce

  • 1/4 cup calamansi juice

  • 3 Tablespoons brown sugar

  • 6 garlic cloves, minced

  • 1/4 teaspoon freshly ground black pepper

Serve with:

  • garlic fried rice (sinangag)

  • fried egg

  • fresh tomato

  • sliced cucumber


  1. Mix together soy sauce, calamansi juice, brown sugar, minced garlic, and black pepper until sugar has dissolved. Toss in sliced beef. Cover and let marinate in the fridge for at least 4 hours (up to 24 hours).

  2. Strain beef from marinade. Add about one tablespoon of cooking oil (grapeseed oil or vegetable oil) in a large skillet over medium heat. Once oil is hot, cook in beef in batches. Cook beef on each side for 2-4 minutes until well browned. 

  3. Serve hot with garlic fried rice and fried egg. 


Bacon Pancakes With Maple Bourbon Sauce


Bacon Pancakes With Maple Bourbon Sauce


For the Pancakes:

  • Slices Bacon
  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 3 tablespoons Sugar
  • Large Eggs (lightly beaten)
  • 3 cups Buttermilk
  • 4 tablespoons Melted Butter (slightly cool)

For the Sauce:

  • 2 tablespoons Bourbon
  • 3 tablespoons Butter
  • 1 cup Maple Syrup



Heat a griddle to medium-high heat. Fry the bacon until crispy and then transfer to a paper-towel lined plate.

Lower the heat to medium, and remove any excess bacon fat. You want there to be a thin layer for the pancakes.

Chop the bacon into crumbs and separate the crumbs into two piles.

In a medium bowl, combine the flour, baking powder, baking soda, salt and sugar, whisking together to thoroughly combine.

Add the buttermilk, butter, half of the bacon, and eggs and whisk together until combined but still slightly lumpy.

Drop spoonfuls onto the griddle, and cook on each side until it bubbles, then flip over. Transfer to a warm oven while finishing the rest.

For the Syrup: In a small pot, combine the bourbon and maple syrup, whisking together over medium heat until thoroughly combined and hot.

Cook until reduced slightly, about 5 minutes, then whisk the butter in, a tablespoon at a time, until fully incorporated.

Serve a stack of pancakes covered in syrup and sprinkled with the reserved bacon crumbs to serve.

Banana Paratha (Indian Flatbread)


  • 1/2 tsp cinnamon powder
  • 1 Black Cardamon pod, seeds only, ground
  • 1 tsp amchoor powder
  • 1 tsp salt
  • 2 Tbsp sugar
  • 2 cup whole wheat flour
  • 1 tsp baking powder
  • 2 mashed bananas
  • 2 1/2 Tbsp yogurt
  • 3 Tbsp coconut oil
  • 1 Tbsp ghee
  • 1/4 cup water


  1. Mash Bananas.
  2. Add Cardamom seeds, amchoor powder, cinnamon, sugar and salt and mix.
  3. To the flour, add the baking powder and coconut oil and combine. once combined, add the wet ingredients to the dry ingredients and mix.
  4. add water in small amounts until dough has a smooth consistency.
  5. Let rest for at least 15 minutes.
  6. Roll dough out into a thin sheet.
  7. Cover with Ghee and fold in an accordian-like style. Roll up into a spiral and roll out until flat again.
  8. Fry up over a medium high heat.
  9. Serve with honey and a pad of butter.
